La Fromagerie's Gruyere
Gourmet gruyere is made from rich, unpasteurized Alpine cow's milk and has a solid texture and tiny salt crystals. This cheese has strong, pungent flavors and is rather sharp. This cheese is delicious plain with some black bread and figs, but it also melts beautifully and works well in gratins, fondues, and soups.
Pair with: Chablis Chardonnay / Pinot Noir
